Perfecting Pizza

A growing group of pizza aficionados (pizzafficionadoes?) are dedicating themselves to making perfect pizza at home. In this article, we will take a look at some of the components of the perfect pizza base, and see exactly what it is that everyone is aiming for.

The base

Traditional pizza bases are made with fine, 00 grade flour, with one of the best brands reputedly being Caputo. The flour used should have a relatively high gluten content, allowing the pizza to be stretched into a thin crust which will be light but tasty, and cook quickly.

The sauce

Purists will only use San Marzano tomatoes, which must be grown in San Marzano itself (many imitations calling themselves San Marzano are grown elsewhere). These tomatoes are generally used out of a can, without being cooked beyond the canning process so that their flavor is not affected. Tomatoes are best pulped and spread over the base in a thin layer. Traditional pizza sauce does not use any extra ingredients.

The cheese

Buffalo Mozzarella, produced from the milk of Italian water buffalo, costs a pretty penny in most fresh food markets. This cheese has a stronger flavor than supermarket cheeses.

Other toppings

Are not used! The classic pizza is just good quality cheese, tomato, and crust – with the occasional exception of a few fresh basil leaves under the crust. Of course, there is no reason not to go crazy once you have mastered this basic pizza. Inventive cooks are topping pizza with everything from spare ribs, to chocolate and it is this opportunity to be creative that makes pizza such an accessible food for a family to cook.
